Acqua Blu's terrace after dark: tables laid with white linen under a timber pergola, lamps lit, the harbour behind

Founded in 2021

A cozy spotin the heart of Senglea

Acqua Blu was founded in 2021 by Matteo Cardona, chef patron, and his wife Brenda Bartolo. It sits on the Senglea waterfront, one of the Three Cities, with the Grand Harbour in front of it and the boats a few metres from the tables.

Chapter 1The setting

One of the Three Cities

Senglea, Birgu and Bormla face Valletta across the Grand Harbour. Senglea is the narrow peninsula in the middle: steep streets of honey-coloured limestone, laundry over the balconies, and a working marina at the bottom of the hill.

Fort St Angelo stands opposite on the Birgu side. The fortifications have been looking at each other for four centuries; the boats below them still go out early.

Chapter 2The water

A harbour that still works

The Grand Harbour is not scenery. Ferries cross it, tugs work it, and the creeks on either side of Senglea are full of boats that are used rather than parked.

It faces north-east into Valletta, which is why the light arrives across the water in the morning and leaves over the roofs behind you.

Chapter 3The founders

Matteo and Brenda

Acqua Blu was founded in 2021 by Matteo Cardona, chef patron, and his wife Brenda Bartolo. Matteo came to it with a long history in the catering industry; Brenda and her team run the welcome.

It is a small place, and it is meant to feel like one: in the restaurant's own words, the warmth of the welcome is what makes everyone feel like part of the family.

Chapter 4The mentors

Two kitchens before this one

Matteo's cooking was shaped by two mentors: the late Chef Angelo Vitadello, and Chef Malcolm Mifsud. The restaurant credits both of them plainly — their legacy, it says, continues to inspire and shape his passion for the culinary arts.

What that looks like on a plate is on the menu.

Chapter 5The kitchen

Chosen with precision

The kitchen describes its own work this way: every ingredient chosen with precision, every dish prepared with passion, from the signature sauces to the desserts.

It is not a fast kitchen, and it does not pretend to be one. The menu warns that a meal here may take a little extra time, and says why: the food is made in the house.

Chapter 6The house

The building

The restaurant occupies a house on the Senglea waterfront, with the dining room inside and the terrace out on the quay. A proper description of the building, its age and how you get in and around it is being confirmed with the restaurant before it is written here.

Access details will be published on the accessibility page as soon as they are confirmed.
